Grilled Zucchini, Corn and Feta

Ingredients

  • 2 to 3 medium zucchini, sliced lengthwise
  • 2 ears fresh corn, husked
  • 2 to 3 tablespoons olive oil
  • Salt and black pepper
  • 1/2 cup crumbled feta cheese
  • Optional: fresh basil, lemon juice, red pepper flakes

Instructions

  1. Preheat grill to medium-high heat and lightly oil the grates.
  2. Brush corn with olive oil and season with salt. Grill, turning occasionally, until lightly charred, about 8 to 10 minutes. Remove and let cool slightly, then cut kernels from the cob.
  3. Brush zucchini with olive oil and season with salt and pepper. Grill 2 to 3 minutes per side until tender with grill marks.
  4. Combine grilled zucchini and corn in a serving bowl.
  5. Top with feta and drizzle with a little olive oil. Add lemon juice, fresh herbs, or red pepper flakes if you like a little extra brightness or heat.

Serve warm or at room temperature. Great alongside grilled meats or fish, or as part of a light summer plate.
